AIP Plantain Bread
Easy and delicious AIP bread made with plantains. Nut free, egg free, grain free.
BREAD. BREAD ON AIP. YES, THIS IS REAL LIFE.
You don't know how much I am missing a slice of my crusty warm paleo bread with almond butter and homemade jam. Well was, until I whipped together this plantain bread. I'll be honest, it's no freshly baked fluffy loaf you would find at the local bakery, but as far as AIP ingredients go, this is pretty amazing.
THE DEETS ON THIS PLANTAIN BREAD
+ The more ripe the plantain, the sweeter your bread will be. I used a green plantain here as I baked the loaf to pair with my turmeric soup.
+ I prefer using cassava flour here over arrowroot or tapioca starch for the best texture and flavor.
+ Feel free to add spices, herbs, and more to this recipe! Make it your own.
+ Just plop the dough onto the baking sheet. You could try making this in a loaf pan too but I prefer it as a wider and flatter loaf in order to really crust up the topping.

Makes One Large Loaf
Compliant for: AIP, Paleo
Total Time: 1 hr 15 minutes
2 green plantains, not overly ripe
1/3 cup melted coconut oil or cooking oil of choice
1 tablespoon grass-fed gelatin
1/2 cup tigernut flour
1/4 cup cassava or arrowroot flour
pinch of salt
1/2 teaspoon baking soda
1/2 teaspoon apple cider vinegar, with the mother
1) Preheat the oven to 350F and lightly grease a baking sheet with coconut oil or parchment paper.
2) In a food processor, blend coconut oil, gelatin and plantains until no lumps remain.
3) Add the remaining ingredients and stir again.
4) Form a large loaf out of the dough and place the free formed loaf on the baking sheet.
5) Bake for 45 minutes to an hour, or until cooked through. Keep checking on it in the oven. Slice, serve, and enjoy!
