Almond Cream Cheese & Asparagus Stuffed Salmon

Cooking in the evening is my happy place. We all have that one thing that makes us forget about the stress of the day, totally winds us down, and fills us with absolute joy. Cooking is mine, which is why you’ll often see elaborate recipes on my blog that take a while to prepare. It’s simply because I LOVE being in my kitchen ❤️


But today I fancy something a little simpler, without sacrificing taste or nutrients, so I’m opting for this paleo stuffed salmon. Simply source some wild caught Atlantic salmon and roll it up with a filling of nut based cream cheese, lemon curd & asparagus. Pop in the oven for 20 minutes and you’re done! SO simple yet so delicious.

Almond Cream Cheese & Asparagus Stuffed Salmon

Ingredients:

4 wild-caught salmon fillets, skins removed

1 container almond based cream cheese

2 tablespoons basil, chopped

2 teaspoons lemon zest

1/2 pound asparagus, trimmed

1 tablespoon grass-fed butter, coconut oil

1/2 cup organic chicken bone broth

2 tablespoons lemon juice

2 teaspoons arrowroot

salt and pepper to taste

Method:

1) Season the salmon fillets with salt and pepper to taste. Lay them down with the skin side up, top with the mixture of the nut based cream cheese, basil, lemon zest, salt and pepper, several spears of asparagus and roll them up before placing them on a grease baking sheet with the seam side down.

2) Bake in a preheated 375C oven until the salmon is just cooked, about 20-30 minutes.

3) Meanwhile, melt the butter in a small sauce pan over medium heat, add the mixture of the broth, lemon juice and arrowroot starch and heat until it thickens, about 3-5 minutes.

4) Serve the salmon rolls topped with the lemon sauce and optionally garnish with more basil and lemon zest.
