Pesto Almond Crusted Salmon (Paleo, Keto)

I love salmon, and I know I've mentioned it several times before but please make sure you are buying responsibly sourced fish and seafood. I'm lucky in Virginia as we are on the Atlantic and there are many local individuals selling wild-caught and fresh fish. However, in Austin this isn't the case. Many mainstream grocery stores sell good fish and there are also services such as Vital Choice Seafood that ship high-quality seafood straight to your door, so there are no excuses for consuming poor quality fish! Anyway, rant over.
This meal is packed of healthy fats- both in the fish and the almond pesto crust. It's also full of flavor and takes under 15 minutes to cook. What more could you want? If you fancy making your own pesto, I have an easy "blender" recipe as part of this chicken dish. Give it a go! You can store it in your fridge and use it in so many dishes for added flavor and nourishment.
Almond Crusted Pesto Salmon
4 wild-caught Alaskan salmon fillets
1 cup almond flour
2 tablespoons pesto sauce
1 tablespoon fresh parsley
pinch of sea salt and black pepper
half a lemon, juiced
grass-fed butter, or coconut oil for cooking
1) In a small mixing bowl, combine almond flour, pesto, parsley, sea salt, pepper and lemon juice.
2) In a large skillet, heat butter or cooking oil of choice over medium heat.
3) Generously coat the salmon with the pesto almond mixture.
4) Fry salmon in the hot skillet for 4-5 minutes on each side (this is based on small fillets, time may vary).
5) Serve! We enjoyed our salmon this week with sautéed asparagus, sprouts and sliced avocado.
