Asian-Style Pork Rice Bowl (Paleo, Keto)
This paleo and keto pork "rice" bowl has all the flavors you would find in your favorite asian dish but with none of the headache inducing ingredients.
This is my attempt to stop Max from sneaking to Panda Express and buying dodgy Chinese food on a weeknight. This meal is as good, if not better, than a Chinese take out. Seriously.
It has all the flavors you would find in your favorite asian dish- the salty sauce and aromatic flavors of ginger and spring onion, but with none of the headache inducing ingredients such as MSG, poor quality meat, additives and preservatives.
We replaced the traditional sticky white rice with cauliflower rice. If you don't want to make it yourself, you can now buy it pre-prepared at most grocery stores. If you are more of a noodle person, you could sub them in too. We also threw in some chopped carrots and peas for extra nutrition and to fill our bellies a little more. The opportunities are endless with this recipe! As long as you have yourself a big bottle of coconut aminos, of course ;)
Asian-Style Pork Rice Bowl
oil for frying
6 spring onions
3 cloves garlic
1 teaspoon fresh ginger
1 pound organic ground pork
1 organic cabbage, finely chopped
4 tablespoons coconut aminos
3 cups cauliflower rice (so many recipes online, or you can buy from most stores)
extra veggies of choice: peas, chopped carrots, organic corn.
seasoning of choice
1) Pour cooking oil into a large skillet and heat on medium.
2) Add spring onion, garlic, ground pork and ginger and cook until pork is cooked through (around 10 minutes).
3) Add cauliflower rice, chopped cabbage, any other extra veggies, coconut aminos, and seasoning. Stir and cook for 5 minutes.
5) Serve in bowls! You can top with sesame seeds, chilli sauce or chopped spring onions
