Banana Nut Muffins (Paleo)
Fluffy, Grain-Free, Naturally Sweetened Muffins Perfect For Grab & Go Breakfast or a Quick Snack!
These banana nut muffins are simple, light and fluffy and packed with healthy ingredients. I created these for Max who has to leave extremely early some mornings as per his flying schedule. He needed a breakfast option that he could grab as he was running out the door, something that didn't need to be heated, didn't need utensils, one that quite literally he could grab-and-go.
As I've discussed before, I far prefer breakfasts that are protein and fat heavy over carbohydrate based meals in the morning. If you have the time, I recommend cooking cage-free organic eggs, avocado, other veggies, and things like that for breakfast. If you are in a rush and don't mind these savory ones cold, you could even try my egg muffins. Max far prefers pastries to cold vegetables, so these are a great alternative for him!
They are sweetened naturally with organic bananas, made creamy with nut butter, and have a hint of warmth from the cinnamon. These muffins are truly delicious! I hope you enjoy them as much as we do!

Banana Nut Muffins
4 organic eggs
1/2 cup nut butter of choice
4 organic bananas
2 tablespoons organic, extra-virgin coconut oil
1 teaspoon vanilla extract
1/2 cup coconut flour
pinch of cinnamon
1 teaspoon baking powder
pinch of sea salt
optional: chopped walnuts or pecans, cranberries, or other dried fruit
1) Preheat oven to 350F and line a muffin sheet with silicone or unbleached liners.
2) In a food mixer, mix together all of the wet ingredients until combined. In a separate bowl, mix dry ingredients.
3) Add dry ingredients to the wet and mix until smooth.
4) Distribute the batter between the muffin liners and bake muffins for 20-25 minutes.
