Bella Grace Staple Salad (Paleo, Vegan)
The most delicious summer salad you will ever eat! Packed with toasted nuts, mixed herbs and fresh watermelon, this salad is like no other.
Let's face it, salads can be boring. More often than not when you order a salad it's a big bowl of leaves with a few cucumber slices and tomatoes thrown in to make it a little more colorful.
But not all salads are created equal people.
This salad is packed with flavor, making it a joy to eat. Fresh, juicy watermelon and lightly toasted nuts make this one of my all time favorite dishes. Throw on your favorite protein and you have yourself a deliciously simple lunch or dinner.
Bella Grace Staple Salad
3 cups fresh spinach leaves
3 cups mixed salad leaves of choice (I secretly LOVE organic romaine despite it not being the most nutritious choice)
1/2 cup watermelon, cut into chunks
1 cups cherry tomatoes
1/2 cup diced cucumber
1 teaspoon Himalayan sea salt
5 tablespoons extra-virgin olive oil, divided
1 1/2 tablespoons balsamic vinegar
3 tablespoons chopped assorted fresh herbs
1/2 cup sliced and toasted almonds
1/2 cup toasted pine nuts
1) Combine melon, tomatoes and cucumber in large bowl. Sprinkle with one teaspoon of salt and toss to blend; let stand 15 minutes.
2) Add four tablespoons oil, vinegar, and herbs to melon mixture. Season to taste with pepper and more salt, if desired.
3) In a large skillet, heat some olive oil and lightly toast your almonds and pine nuts until slightly brown.
4) In a large bowl, toss your spinach and salad leaves with the last tablespoon of olive oil. Pour on all the toppings and serve!
