RESTART Approved Cacao Almond Butter Bark
Perfect for those following RESTART, the 21DSD, or who are Keto, this cacao almond butter bark is the most delicious sugar-free pick me up!
I know, I know. I said I wouldn't be posting any dessert recipes during my sugar-detox and here is a dessert (ish) recipe. I guess I just can't quite keep myself away from creating things with cacao.
Since being on RESTART, my sugar cravings have completely diminished. In fact within just FOUR DAYS of being on the program I found myself not even thinking about cake, which is a pretty big deal for a baker. I also find that I'm far less hungry, have more energy, and have a clearer mind.
I made this cacao almond butter bark this morning. As I find myself eating less due to lack of hunger, I do want to ensure that I'm getting enough high-quality fats and protein into each day. A square of this bark is my answer (it helps that it is truly delicious). Each tiny piece is packed with 6g of healthy fats from sources such as coconut oil and sprouted nut butter and 3g of high-quality protein from collagen peptides.
Before you exit out of this recipe because you don't have any collagen on hand, know that you can absolutely omit the collagen powder if you fancy, without needing to tweak the recipe. As mentioned, I chose to incorporate collagen into this recipe as I use this bark as an easy way of getting in additional high-quality protein and find that when collagen is added, each little piece is more filling. I also experience benefits such as improved hair, skin and nail health, gut function and digestion, and deeper sleep when consuming grass-fed, pasture-raised collagen every day, so I'm inclined to keep it in.
Note that the bark may taste bitter to those not following the sugar detox. I didn’t feel the need to add any sweeteners but you can add a bit of honey or maple syrup if you want!
Cacao Almond Butter Bark
(Makes 20 servings)
1/4 cup coconut oil
3/4 cup almond butter (or nut butter of choice)
3 tablespoons cacao powder
1 teaspoon vanilla extract
1/8 teaspoon flaked sea salt
1/4 cup grass-fed, high-quality collagen powder
1/8 cup various nuts and seeds (your choice! I used pumpkin, unsweetened shredded coconut and chopped almonds)
optional: if you are not following the sugar-detox, feel free to add a small amount of sweetener such as raw honey, maple syrup or monk fruit sweetener. As I have adapted to the RESTART program, I find myself enjoying the creamy & slightly bitter taste of these bites!
1) In a small saucepan, melt coconut oil and almond butter together over a low heat.
2) Add the rest of the ingredients and stir.
3) Pour the mixture in a small pan and pop in the freezer for 30 minutes. Break into pieces and enjoy! I keep the bark in the freezer and grab a piece whenever I fancy an energy boost or a yummy snack.
