Chocolate Chunk Pumpkin Bread (Paleo, Gluten-Free)
This pumpkin loaf is something to brag about. It’s so decadent, moist and delicious and the best news? It’s free from refined sugars, grains and dairy!
Apologies for being a little MIA the past week, I’ve been traveling on tour so haven’t had my typical schedule. My master’s program also just started so I’ve been reading a ton, learning a ton, and writing countless essays.
Last night we checked into THE most gorgeous Airbnb ever in NW Arkansas, which means that we have a KITCHEN!! We were so excited to be able to cook our own meals again that we took a late night trip to Whole Foods and bought ingredients for a midnight feast- an organic roast chicken with all the trimmings.
I also noticed our host has an array of ingredients that I can use to make this delicious pumpkin loaf I made last week, so I’ll be making an extra-large one of these today.
I love pumpkin-based treats, but this loaf is really something to brag about. It’s so decadent, moist and delicious and the best news? It’s free from refined sugars, grains and dairy!
Chocolate Chunk Pumpkin Bread
1 ½ cups almond flour
½ cup coconut flour
1 ½ teaspoons baking powder
Pinch of Himalayan Salt
2 tablespoons pumpkin pie spice
1 can of organic pumpkin puree
4 organic eggs
½ cup maple syrup
¼ cup coconut oil
1 teaspoon vanilla extract
1 cup dark chocolate, broken into chunks
- Preheat oven to 350F and lightly grease a loaf pan with coconut oil.
- In a large bowl, mix almond flour, coconut flour, baking powder, salt and pumpkin pie spice. Set aside.
- In a food processor, whisk eggs, maple syrup, coconut oil and vanilla extract until combined.
- Gradually add the dry, flour mixture and stir until smooth. Add chocolate chunks and pour mixture into the loaf pan.
- Bake for an hour, or until a toothpick comes out clean. Cool, slice and enjoy!
