Chocolate Muffins (Paleo, Keto Option)
These paleo and keto friendly, chocolate chunk muffins are AMAZING. They are perfect with a cup of tea, or as a grab-and-go snack.

I have had a ton of requests for Keto friendly recipes lately. While many of my recipes don't specifically state that they are ketogenic friendly, many of them can be made so by substituting the sweetener traditionally used for a lower carbohydrate one such as swerve or erythritol. These chocolate chunk muffins are AMAZING. They are perfect with a cup of tea, or as a grab-and-go snack. They are richly flavored with a moist crumb and like most muffins, are relatively simple to make. Enjoy these and don't forget to let me know how you get on!
Chocolate Chip Muffins
Makes 12 muffins
2 cups almond flour
2 whole eggs
1/4 cup coconut oil or grass-fed butter
1/4 cup sweetener of choice (I used honey)
1 tablespoon vanilla extract
1 teaspoon apple cider vinegar
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup dark chocolate chips
1) Preheat oven to 350F and line a muffin tin with liners.
2) In a food processor, mix all the ingredients except the chocolate chips until a batter has formed.
3) Fold in the dark chocolate chips.
4) Fill the muffin liners with the mixture until they are 3/4 full.
5) Transfer to the oven and bake for 15 minutes, or until golden brown around the edges.
6) Remove, cool and enjoy!
