Crunchy Fried Shrimp (& Tangy Dipping Sauce)

Seafood lovers will go crazy for these crispy "breaded" Crunchy Fried Shrimp. The coating is totally grain-free, perfectly seasoned and provides extra crunch by combining both arrowroot flour and coconut flour. Dunk into my Paleo friendly tangy dipping sauce for the ultimate experience.

Let's talk about Shrimp quality, or prawns as my UK friends refer to them as.

Wild-Caught, Always: As always, triple check that you are buying "wild-caught" shrimp rather than "farm raised" to ensure you are receiving the highest-quality seafood. Farm raised shrimp are often raised in commercial ponds and fed commercial pellets, sometimes containing antibiotics to ward off disease.

Frozen is often safer: It may come as a surprise to you but more often than not, it's a safer bet to opt for frozen, wild-caught shrimp, rather than "fresh". Why? Because typically, "fresh" seafood at the counter has been previously frozen and thawed in poor quality conditions. Unless you’re absolutely sure that the “fresh” shrimp at the store are actually fresh-off-the-boat or you buy from a local fishmonger you know and trust, frozen shrimp are a way better bet.

Things to avoid: Shrimp that smell like ammonia (an easy way to tell that they’re bad). Shrimp that have soft or slimy shells.

Once you have chosen your shrimp and are ready to rock this crunchy fried shrimp thing, create a cooking station with arrowroot and coconut flour, beaten eggs, and seasoning. Dip each of the shrimp in the flour mixture before placing in a hot skillet full of your favorite cooking oil.

Sizzle... Sizzle...and TADAAH! Crunchy fried shrimp you can dip into this divine dipping sauce featured below. Go for it!

Crunchy Fried Shrimp w/ Dipping Sauce

1 lb. wild-caught shrimp, peeled

1 organic egg, beaten

2/3 cup coconut flour

1/2 cup arrowroot powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

coconut oil (or cooking oil of choice) for frying

Dipping Sauce:

1/4 cup homemade mayo (or Primal Kitchen has a great store bought option)

2 tablespoons sugar-free ketchup

1 teaspoon Sriracha or hot sauce

1 garlic clove minced

salt and pepper to taste

1) In a large bowl, whisk together coconut flour, arrowroot powder, salt, and pepper (and any additional seasonings you may fancy adding).

2) Crack your egg into a small bowl and beat until fully whisked. Dip shrimp in the beaten egg mixture, and then dip in the flour mixture.

3) Set aside. Repeat with all shrimp.

4) In a large skillet, heat cooking oil of choice over medium heat. Fry your shrimp (a few at a time) by placing into the hot oil, waiting until the bottom side has browned, flipping and cooking through. Shrimp should be crispy and crunchy!

5) Remove from skillet and repeat until all shrimp are fried.

6) Mix all your dipping sauce ingredients together and set aside in a serving ramekin. Dunk shrimp into dipping sauce and enjoy!
