Grain-Free Beef Enchiladas

I just made these last night for "Taco Tuesday" and they were a hit. I know they aren't tacos at all, they are enchiladas, but you get the gist. These are delicious, healthy, hearty and comforting. They do have a little spicy kick so my friends with a versatile palette are in for a treat. The sauce can be compared to an authentic Mexican mole, but with a tomato heavy base. Pair with grain-free, organic tortilla chips, guacamole, and maybe even your favorite homemade cocktail for the ultimate feast.

Grain-Free Beef Enchiladas

(Serves four)
Ingredients:

Sauce:

3 tablespoons grass-fed butter, or coconut oil 

1/2 teaspoon coconut flour

1/8 cup chili powder

1 teaspoon dried oregano

1 teaspoon ground cumin

2 cups chicken broth

12 oz tomato paste

pinch of Celtic sea salt

Filling:

1 tablespoon grass-fed butter, or coconut oil

1 large yellow onion, chopped

1 teaspoon ground cumin

1 1/2 pounds organic, grass-fed, ground beef

pinch of Celtic sea salt

Tortillas:

Siete Tortillas

Optional toppings:

raw cheese, cashew cheese sauce, guacamole, avocado, cilantro

Method:

1) Preheat oven to 400ºF. Melt the grass-fed butter in a medium saucepan over medium-high heat until melted. Add coconut flour and whisk constantly until the coconut flour just turns golden brown, about 2 minutes.

2) Add the chili powder, oregano and cumin and stir for 30 seconds.

3) Whisk in chicken broth, tomato paste and sea salt. Bring to a simmer over medium-low heat and cook until sauce begins to thicken, about 20 minutes.

4) Place grass-fed butter in a large cast iron over medium heat. Add the onion and cook until onion is translucent.

5) Add cumin, ground beef and salt. Saute until beef is cooked through.

6) Add half of your sauce to the bottom of a small baking dish and spread. 

7) On top of a tortilla add 1/4 cup of ground beef. Carefully roll the tortilla around the beef and place it in the baking dish. 

8) Repeat with the remaining beef and tortillas.

9) Pour the remaining sauce on top of the enchiladas and IF you are choosing to add raw cheese, or cashew cheese add this now.

10) Bake for 25 minutes and serve.
