Immune Boosting Chicken in Bone Broth Soup

If you're feeling a little under the weather, or feel an onset of the dreaded flu, this one is for you. With immune boosting ingredients such as organic bone broth, garlic, and turmeric, this is the ultimate healing soup.
Yesterday morning, my brother Toby walked into work at the Autism Trust feeling bleh. He has just come back from England, survived the 10 hour flight and is not only jet-lagged, but dealing with the sniffles, headaches, and aches. My mum and I ran to the rescue with our infamous chicken soup.
I believe so strongly in the healing power of food. “Let food be thy medicine and medicine be thy food” couldn't be more accurate. When I’m starting to or are feeling under the weather, my first thought is to turn to my kitchen, not the medicine cabinet. Ditch the Advil and opt for some superfoods to kick your immune system into high gear.
Let's talk about the flu busting ingredients in this recipe:
Bone Broth- Whether you make your own, or buy a high-quality broth from the store, bone broth contains a variety of valuable nutrients in a form your body can easily absorb. Broth with marrow is particularly powerful. Marrow is technically an organ meat, and organ meats tend to be extremely rich in nutrition. Marrow plays an important role in living creatures as a part of the immune system as its cells are necessary for immune function. Bone broth is also great for when your appetite is weak from being sick.
Garlic – Eating garlic can actually boost the number of virus-fighting T-cells in your bloodstream. It also contains allicin which converts to allicin, which is believed to be the major antibacterial compound in garlic. Garlic stimulates the activity of immune system cells that destroy cold and flu viruses.
Turmeric – Probably best known for its ability to fight inflammation, turmeric contains a powerful antioxidant called curcumin which is responsible for this decrease in inflammation that is oftentimes found to be related to various illnesses.
Celery- Since it is rich in many beneficial vitamins including Vitamin C, celery is helpful in boosting the immunity. It supports the development of an efficient and robust immune system so that we are less vulnerable to infections and viruses.
White onion- Onions contain quercetin, a nutrient that breaks up mucus in your head and chest while boosting your immune system. When the smell of raw onions makes your nose run and your eyes tear up, this stimulates your immune system to fight infection. Onions also contain allicin which slows down and kills a variety of viruses and bacteria.
This simple but powerful recipe is a perfect way to boost your immune system all year round!
Immune Boosting Chicken in Bone Broth Soup
bone broth from an organic chicken
3 plump chicken breasts, organic
6 carrots, chopped
6 potatoes, cut into cubes
3 celery stalks, chopped
2 organic onions, chopped
3 tablespoons garlic, minced
1 tablespoon turmeric
salt and pepper to taste
1) Preheat oven to 350F. In a dutch oven pan, saute the chopped onion in grass-fed butter or cooking oil over medium heat until translucent.
2) Cut chicken breasts into small cubes and add to the onions in the pan.
3) Once chicken has browned all over, add chicken broth, carrots, potatoes, celery, garlic, turmeric, and seasoning. Stir.
4) Bake in the oven at 350F for 3 hours, checking occasionally (if it dries out at all add more broth or filtered water).
Serve warm and enjoy all the amazing healing benefits!
