Nut Butter Mug Cake (Paleo)

In the mood for cake? You can make this nut butter based chocolate mug cake in less than 2 minutes, which is dangerous but wonderful.
I make this for Billy multiple times a week and he loves it. It’s chocolatey and fluffy without the nasty ingredients and can satisfy any cravings in record time.
Note: If microwaves aren’t your thing, I completely get it. There’s an oven baked option in the recipe and you can still have your cake in speedy time!
Nut Butter Mug Cake
1 tablespoon cacao powder
2 tablespoons coconut flour
pinch of salt
1 teaspoon baking soda
2 tablespoons sweetener of choice
1 tablespoon coconut oil, melted
1 tablespoon nut butter, melted
1 tablespoon unsweetened nut milk
1 organic egg
¼ teaspoon vanilla extract
- Combine dry ingredients in a large mug and mix well.
- Add liquid ingredients and mix until minimal lumps.
- Put mug in microwave for 1 minute, stir and then microwave for another 30 seconds.
- If you prefer to oven bake, place ingredients in a ramekin and bake for 15-20 minutes at 325F.
