Simple Shrimp Salad (Paleo)
One of the easiest dishes you will ever make. This simple shrimp salad is perfect for summer parties; light, refreshing, healthy and delicious.
I first made this recipe for my first July 4th celebration in America.
Back then I had no idea that people make hot dogs, burgers, wings, potato salad and all that good stuff on this special day. So of course, I turn up at our family friend's potluck offering a huge bowl of this shrimp salad.
Surprisingly though it was a hit! It provided a light, healthier option which seemed to be popular among the guests. Now we enjoy this shrimp salad as a staple dish throughout the hot summer months, and of course, at every July 4th party we go to.
Simple Shrimp Salad (Paleo, DF, GF)
1 1/4 pounds of fresh, peeled shrimp
3 diced avocados
1 large watermelon wedge, chopped with seeds removed
1 red onion, chopped
3 large red tomatoes, chopped
1 large yellow tomato, chopped
1/2 cucumber, chopped
1/2 bunch parsley, chopped
2 tablespoons of freshly squeezed lime juice
Seasoning to taste
1) Put the onions in a medium bowl with the tomatoes, cucumber, lime juice and seasoning. Leave aside for 10 minutes to soak.
2) Add the prawn, avocado, watermelon and parsley and toss gently to serve.
